Homemade Pizza Pockets
These hand-held pizzas are so much fun. You can fill them with any topping you like. I have kept this recipe really basic, but feel free to use your imagination and stuff them with your favourite pizza toppings. Just make sure you use only about 1 tablespoon of topping per pocket.

I buy uncooked pizza dough in the fresh or frozen section on my local grocery store. It comes in a ball. Make sure you defrost it (if it is frozen) in the fridge and then bring it to room temperature for at least an hour before trying to stretch it out.

Winter Pinto Bean Soup with Freekeh and Lemon
If you haven’t used freekeh, you are in for a real treat. Freekeh is a wheat that has been harvested early, while the grains are still tender and green. Look for fresh freekeh that has a greenish hue. You can find it in most specialty or Middle Eastern shops. Feel free to replace it with quinoa or another grain, but use only 1 cup if you are swapping it for another grain. This recipe was inspired by Yasmin Khan who wrote Zaitoun.
