Caramelized Peach and Plum Cake Recipe

This simple cake will soon become and staple. Make it with peaches, plums, sliced apples, or pears.
Ingredients
- ¾ cups sugar
- ½ cup unsalted butter (1 stick), room
- temperature plus more for greasing the pan
- 1 cup flour
- 1 tsp. baking powder
- ⅛ tsp. salt
- 2 eggs
- 1 tsp. vanilla
- Zest of one lemon
- 6 plums, halved and pitted or 12 small black
- Italian plums or 6 peaches or a combination
- Sugar and cinnamon for the top (I like the
- coarse sugar- demerara)
Instructions

Preheat oven to 350ºF

Prepare 8-10 inch spring form pan or a 8-by-8 or 9-by-9 square pan – grease bottom and sides with butter.

In a medium sized bowl, whisk together the flour, baking powder, and salt.

Cream butter and sugar in a standing mixer. Add eggs one at a time, and add vanilla and zest.

Add flour mixture to sugar/egg mixture, and mix on medium speed until combined.

Spoon batter in prepared pan, smooth out using an offset spatula or knife/spoon. You will have only a very thin layer of cake (don’t worry).

Arrange the fruit evenly over the cake layer, cut side up.

Sprinkle the top with some sugar and a little cinnamon.

Bake for 50-60 minutes depending on the size of the baking pan (less for a bigger pan).

Cool on a rack before unleashing the cake! Serves 8-10
