Homemade Pizza Pockets Recipe

These hand-held pizzas are so much fun. You can fill them with any topping you like. I have kept this recipe really basic, but feel free to use your imagination and stuff them with your favourite pizza toppings. Just make sure you use only about 1 tablespoon of topping per pocket.
Ingredients
- 1 store-bought RAW pizza dough, at room
- temperature for at least one hour before
- using
- About ¾-1 cup pizza sauce
- About 1-1½ cups shredded cheese (I like an
- Italian cheese mix) or a little slice of fresh
- mozzarella for each pocket
- Suggested Toppings, optional
- ½ cup pepperoni or cooked sausage
- ½ red or green pepper, diced
- Handful of mushrooms, diced
- ¼ red onion, diced
- 1 cup baby spinach or arugula, chopped
- ½ cup crumbled goat cheese
- Drizzle of honey for each pocket
Instructions

Make sure the raw pizza dough is left at room temperature for at least one hour before using.

Preheat oven to 425˚F and place the oven rack second from the lowest position. Line a cookie sheet with parchment paper.

Very lightly, flour your work surface. Roll or stretch the dough into a rectangle about ½-inch thick.

Cut the dough in half lengthwise and then into rectangles (each rectangle will be folded over to form a pocket).

Using one rectangle, place a bit of sauce, cheese and about 1 tbsp of toppings on only half of the rectangle. Leave a border around the filling. Using a wet finger, dampen the border and then fold the unfilled portion of the dough over top of the filling and press the edges to seal. You can use a fork or your fingers to press the edges together.

Place filled pizza pocket on the parchment paper and repeat with all the rectangles. Leave a little space between each pizza pocket.

With a sharp knife cut 2-3 little slits in each pocket so some steam can escape.

Place in the oven and bake for 20 minutes or until the pizza pockets are golden brown. Makes 8 pockets.
