This delicious recipe, inspired by Bon Appetit is easy and can be doubled to feed a crowd. It can be done well in advance or last minute.

Ingredients

  • 1 1 3½–4-lb. chicken, cut into quarters, or 2
  • large skin-on, bone-in chicken breasts
  • and 2 skin-on, bone-in chicken legs
  • 2 onion, sliced thinly
  • 2 cloves garlic, smashed
  • 1 lemon, sliced in rounds
  • 1 Tbs. ground dried sumac
  • 2 tsp. kosher salt
  • 1 tsp. ground cinnamon
  • 1 tsp. baharat or allspice
  • ½ tsp. cayenne pepper
  • ¼ cup olive oil
  • 1 cup water or chicken broth
  • 2-3 tbsp. zaatar (this goes not before
  • cooking)
  • Freshly ground pepper
  • Pita or lavash for serving

Instructions

    Place chicken, onions, garlic, all the spices (EXCEPT the zaatar), olive oil and broth in a large tiptop bag or large bowl, toss together, let marinate at room temp for 45 minutes or in the fridge for a few hrs or overnight.

    Preheat the oven to 400˚F convection.

    Place the chicken and all the marinade in a roasting pan just big enough to fit the chicken with a little room between each piece. Arrange the chicken so that it is skin up.

    Sprinkle the chicken with additional kosher salt and the zaatar.

    Roast for 1 hr.
