Zaatar Roasted Chicken with Onion and Garlic Recipe

This delicious recipe, inspired by Bon Appetit is easy and can be doubled to feed a crowd. It can be done well in advance or last minute.
Ingredients
- 1 1 3½–4-lb. chicken, cut into quarters, or 2
- large skin-on, bone-in chicken breasts
- and 2 skin-on, bone-in chicken legs
- 2 onion, sliced thinly
- 2 cloves garlic, smashed
- 1 lemon, sliced in rounds
- 1 Tbs. ground dried sumac
- 2 tsp. kosher salt
- 1 tsp. ground cinnamon
- 1 tsp. baharat or allspice
- ½ tsp. cayenne pepper
- ¼ cup olive oil
- 1 cup water or chicken broth
- 2-3 tbsp. zaatar (this goes not before
- cooking)
- Freshly ground pepper
- Pita or lavash for serving
Instructions

Place chicken, onions, garlic, all the spices (EXCEPT the zaatar), olive oil and broth in a large tiptop bag or large bowl, toss together, let marinate at room temp for 45 minutes or in the fridge for a few hrs or overnight.

Preheat the oven to 400˚F convection.

Place the chicken and all the marinade in a roasting pan just big enough to fit the chicken with a little room between each piece. Arrange the chicken so that it is skin up.

Sprinkle the chicken with additional kosher salt and the zaatar.

Roast for 1 hr.
