If you wan tot keep these gluten free, use quinoa flakes in place of the matzo meal.

Ingredients

  • 2 pounds of chicken scaloppini
  • 1 cup potato starch
  • Salt and pepper for the chicken
  • 3 cups matzoh meal
  • 1 tbsp. salt
  • 1 tbsp. garlic powder
  • 1 tsp. black pepper
  • 1 tsp. onion powder
  • 4 beaten eggs
  • Vegetable oil for frying or baking

Instructions

    Prepare a large piece of parchment paper as a work surface. Put chicken on one side, then the potato starch, a shallow bowl of beaten eggs in the centre.

    Toss matzoh meal with salt, pepper, garlic powder and onion powder in a bowl.

    Pour out this mixture onto the parchment (one side). Making an assembly line.

    Season chicken with a little salt and pepper. Dredge lightly in the potato starch, starch and shake off, then into beaten eggs, then dip and press in seasoned matzoh meal.

    If you are baking the schnitzel: Preheat the broiler and line a large cookie sheet with foil. Generously oil the sheet. Lay a piece of prepared schnitzel on the oiled sheet and then immediately flip the piece of schnitzel so that now both sides are coated with a little oil. Continue with the remaining pieces of schnitzel .

    If you are frying the schnitzel: In a large skillet, heat oil to about 350 F. Fry a few pieces of chicken at a time, turning once, until they are well browned on each side - adjust heat as required. Drain well. Serve warm or cold. Serves 6
