A Harira soup is a traditional Moroccan soup made with lamb or beef stewing meat and legumes. This is my vegetarian version. This soup is great made a few days in advance!

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced small
  • 1 tsp cumin
  • ¾ tsp ground coriander
  • 1 tsp harissa paste or ¼ tsp cayenne
  • 2 cloves garlic, peeled and smashed
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • ¼ lb/150 g green beans, trimmed and cut into
  • thirds
  • 1 small can (14 oz/411 g) diced tomatoes
  • 8 cups chicken or vegetable stock, or a
  • combination with water
  • 1 can chickpeas, drained and rinsed
  • ¾ cup dried green, brown or French lentils,
  • rinsed
  • 75 g or about ¼ box pasta, either vermicelli or
  • another small pasta
  • Salt and pepper to taste
  • Handful of fresh Italian parsley, chopped

Instructions

    Heat a large soup pot over medium-high heat. Add oil, then add onion and cook until the onion becomes translucent, about 5 minutes.

    Add cumin, coriander, harissa or cayenne, garlic, carrots, celery and green beans. Cook for a few minutes, stirring occasionally.

    Add the diced tomatoes and cook for 2 minutes.

    Add stock, chickpeas and lentils. Bring to a boil, reduce heat to simmer and cook without a lid for 30-40 minutes.

    Add pasta, cook for 10 minutes.

    Serve garnished with parsley. Serves 6-8.

Tips & Storage

How to Store
Soup stores beautifully! Keep in the refrigerator for up to 5 days in an airtight container. The flavors often improve overnight.
Can I Freeze This?
Most soups freeze wonderfully for up to 3 months. Cool completely, then store in freezer-safe containers leaving room for expansion. Thaw overnight in the fridge.
Make Ahead Tip
This soup is perfect for meal prep. Make a big batch on Sunday and enjoy it throughout the week. Simply reheat on the stovetop over medium heat.
