This soup highlights summer peppers and tomatoes and comes together in no time! Adding pesto amps up the flavour. I use store bought pesto. In a pinch, you can leave the pesto out and add a handful of basil instead.

Ingredients

  • For Grilling
  • 4 lb. ripe tomatoes, you can use any
  • combination, even cherry tomatoes
  • 1 red pepper
  • 1 Tbs. olive oil
  • For the Soup
  • 2 Tbs. olive oil
  • 3 sprigs fresh thyme, leaves only
  • 2-3 tsp. kosher salt
  • 2½ cup almond milk, dairy milk or any
  • milk alternative
  • 1½ Tbs. pesto, I use no-nut and no-cheese
  • pesto
  • 1 Tbs. honey
  • Plenty of coarsely ground black pepper
  • A blender

Instructions

    For Grilling: Preheat your grill to high, remove the stems from the tomatoes and drizzle the olive oil on them to coat. Turn the grill to med-high and place the tomatoes down onto the grill. Grill the tomatoes for 3-4 minutes on the first side, carefully flip them and grill the second side, remove from the grill and place into a bowl.

    Cook the Pepper: Place the whole pepper on the grill and grill for 4-5 minutes or until the skin is charred in spots, flip and repeat on 4 sides, remove from the grill allow to cool.

    When cool enough to handle, peel the skins off the pepper and remove the flesh away from the seeds and core, discard the seeds and core.

    For the Soup: Place the tomatoes, flesh from the pepper, thyme leaves, salt, milk, pesto, honey and pepper in the blender. Blend until smooth.

    Reheat in a pot, taste for salt, pepper and honey. Serves 4-6

How to Store
Soup stores beautifully! Keep in the refrigerator for up to 5 days in an airtight container. The flavors often improve overnight.
Can I Freeze This?
Most soups freeze wonderfully for up to 3 months. Cool completely, then store in freezer-safe containers leaving room for expansion. Thaw overnight in the fridge.
Make Ahead Tip
This soup is perfect for meal prep. Make a big batch on Sunday and enjoy it throughout the week. Simply reheat on the stovetop over medium heat.
