Torta Caprese - Flourless Chocolate Almond Cake Recipe

This is one of my favourite cakes. The denseness of the almond flour combined with the creamy chocolate makes the cake smooth and moist and extremely forgiving!
Ingredients
- 200g dark chocolate (70%), chopped
- 200g (about 1¾ sticks) unsalted butter or
- coconut oil
- 4 eggs, room temp or slightly warmed in a
- warm water bath
- 250g (1¼ cup) sugar
- 1 tsp. vanilla or almond extract
- ¼ cup cocoa powder
- 250g (1¼ cup) ground almonds
- Powdered sugar for dusting on the cake when
- serving
Instructions

Preheat oven to 350˚F, line 20-23 cm or 8-9 inch round springform pan with parchment paper, grease the parchment paper, sprinkle with sugar or cocoa.

Melt the chocolate with butter/coconut oil over double boiler or a glass bowl over boiling water (or microwave). Remove from heat.

In a mixer, beat warm eggs with sugar in mixer until light and fluffy, 3 minutes or so.

Fold ¼ of egg mixture into chocolate mixture, then fold all chocolate mixture and the extract into eggs.

Using a fine mesh strainer sprinkle the cocoa powder, over the chocolate mixture, add the ground almonds, and then gently fold until incorporated.

Pour batter in prepared pan.

Bake 40 min, until firm in the centre, this is a moist cake, don’t overcook it. Cool slightly remove outer ring from springform. Let cool completely. Wrap in plastic wrap and let sit overnight at room temp (or serve the same day).

Before serving, dust the top of the cake with powdered sugar. Serves 10 Make Ahead Tip: This cake is best served the next day, it gets better as it sits.
