The Ultimate Broccoli and Cheddar Soup Recipe

I love a good broccoli and cheddar soup, especially with a delicious aged white cheddar. This soup is the ultimate comfort food for those cold fall and winter nights. Serve it with a delicious biscuit or thick crusty bread.
Ingredients
- 1 large head of broccoli, florets broken and
- stem trimmed and peeled and cut into a dice
- 2 tbsp salted or unsalted butter (you will need
- less overall salt if you use salted)
- 1 large cooking onion, finely chopped
- 1 large russet potato, peeled and diced
- 2 cloves garlic, minced
- 4 cups/1 L vegetable or chicken stock
- Kosher salt
- Freshly ground pepper
- 100 g aged white cheddar, grated
Instructions

Add butter to a medium-sized pot on medium heat. When the butter stops foaming, add the onion and potato. Sauté until the onion is translucent and the potato has softened, about 5 minutes. Add garlic and sauté until it starts to release a beautiful garlicky aroma, about 30 seconds or so.

Add the broccoli stems, sauté for 2-3 minutes. Add the florets and the stock. Bring to a boil.

Cover the pot and turn the heat down to low. Cook for 10 minutes or until the potato and broccoli stems are soft. Take the pot off the heat and blend using an immersion blender or a standing blender.

Return the soup to the pot, add salt and pepper to taste.

Stir in a little more than half of the cheddar cheese. Taste. Ladle into bowls and top each bowl with additional cheddar cheese, using it all up. Serves
