Smashed Crispy Crusted Brussels Sprouts Recipe

This is one of my favourite recipes to make. Everyone loves them and they are so easy! You can keep the cheese or leave it off.
Ingredients
- About 900 g/2 lb Brussels sprouts
- About 3 tbsp extra virgin olive oil, divided
- 1 tsp granulated garlic
- Kosher salt or sea salt
- About ¼ cup grated Asiago, Parmesan or
- even mozzarella cheese

Bring a large pot of water to boil. Add about 3 teaspoons kosher salt or 2 teaspoons table or sea salt.

Preheat oven to 425˚F. Cover a large cookie sheet with foil.

While the water is boiling, clean the Brussels sprouts. Trim a small amount off the bottom of the sprout and peel off and discard the outer leaves. Trim any damaged parts of the sprout. Add the Brussels sprouts to the boiling water and cook for 10 minutes, drain. Spread the Brussels sprouts onto a kitchen towel to let some of the hot water drain and evaporate until they are cool enough to handle.

Drizzle the foil with about 1 tablespoon of oil. Distribute the Brussel sprouts onto the foil. Using the heel of your hand or the bottom of a mug, smash the Brussels sprouts so they splay open and break.

Drizzle the Brussels sprouts with remaining olive oil (spread the oil a little with your hand), sprinkle with granulated garlic and salt.

Bake for 15 minutes, remove from the oven, flip the Brussels sprouts, sprinkle with cheese and bake for another 10-15 minutes or until crispy and browned.

Serve hot! Serves 6.
