Roasted Vegetables with Sesame, Pine Nuts and Sweet Tahini Recipe

drizzle This recipe is a go-to staple for me. Prepare the dressings well in advance, prepare your veggies on the cookie sheet and all you need to do is throw the veggies in the oven!
Ingredients
- For the Tahini Dressing
- 2 Tbs. tahini
- 1 small clove garlic, minced
- ¼ tsp. low sodium tamari
- 2 tsp. honey
- 2 tsp. apple cider vinegar
- 2 tsp. mirin
- Salt and pepper to taste
- Water to thin if necessary
- Veggies of your choice (1½ pounds per
- cookie sheet - serves 6-8)
- Olive oil to drizzle on the veggies
- Sesame seeds and toasted pine nuts to
- garnish
- Vegetable
- Steam Time (covered) and
- (about ¼ - ½ pound per person)
- Broccoli Florets

- 450˚F, 10 minutes
- Carrots - peeled and whole
- 425˚F, 20 minutes
- Squash cubes - 1-inch
- 500˚F, 5 minutes
- Sweet potato - 1 inch thick
- 500˚F, 5 minutes
- Potato chunks - 1 inch thick
- 425˚F, 20 minutes
- Brussels Sprout halves
- 425˚F, 20 minutes
Instructions

Make the Tahini Dressing: Mix all the ingredient together. Thin with water if necessary and set aside.

Preheat oven to temperature according to the chart below and line a cookie sheet with parchment. Prepare a large piece of foil to cover the sheet if necessary (I use the extra large foil), depending on the veggie of choice.

Place the veggies on the prepared sheet and drizzle with a little olive oil and toss.

Roast veggies according to chart below. Remove from the oven, transfer veggies to a serving platter and drizzle with Tahini Dressing and sprinkle with sesame seeds and pine nuts, serve hot. - Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.
