This easy tomato salad can be served as a side dish. It is fairly neutral and quite refreshing. A perfect accompaniment to well-seasoned meat or fish dishes.

Ingredients

  • For the Vinaigrette
  • 1 clove garlic, minced or finely grated on a
  • microplane or garlic press
  • 1 tbsp lemon juice
  • 2-3 tbsp best quality extra virgin olive oil
  • ½-1 tsp kosher salt
  • Freshly ground pepper
  • 2 pints cherry tomatoes or about 2 cups
  • mixed cherry, grape and other tomatoes
  • 1 handful of chopped herbs (parsley,
  • cilantro, chervil, oregano or mint—or a
  • combo)
  • ½ small cooking onion, sliced in ¼-inch
  • slices)
  • Coarse salt (I like Maldon salt)
  • Freshly ground pepper

Instructions

    Make the Vinaigrette: In a small bowl mix together all the ingredients. Set aside.

    Slice the tomatoes in half or quarters if they are larger. Place them in the bowl with the vinaigrette. Toss.

    Roughly chop the herbs and add to the tomatoes. Add the sliced onion, toss.

    Sprinkle with coarse salt and freshly ground pepper.

    Serve at room temperature. Serves 6.
