Ingredients

  • 1 cup (4½ ounces) all purpose flour
  • ¼ cup plus 2 Tbs. (1 ounce) unsweetened
  • natural cocoa powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup (4 ounces) unsalted butter, melted
  • and warm
  • 1¼ cups packed light brown sugar
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • ½ cup hot water
  • 1 recipe of Warm Ganache, Delicious
  • Dish, optional

Instructions

    Preheat oven to 350ºF and position a rack in the lower third of the oven. Grease the bottom of an 8” or 9” round cake pan or line it with parchment paper.

    In small bowl, whisk the flour, cocoa powder, baking soda, and salt.

    In a large bowl, with a wooden spoon or rubber spatula, mix together the melted butter and brown sugar. Add the eggs and vanilla, stir until well blended.

    Add the flour mixture all at once and stir until the flour is moistened. Pour the hot water over the batter, stir just until it is incorporated and the batter is smooth. Scrape the batter into the prepared pan

    Bake for 30 minutes for a 9” pan or 35 to 40 minutes for an 8” pan. A tooth pick inserted in the centre should come out clean.

    Let the cake cool in the pan on a rack for 10 minutes. Then run a thin knife around the edge and invert the cake unto a rack.

    Once cool, set the rack over a baking sheet and pour the warm ganache over the cake and spread it on the top. Allow the ganache to drip down the sides. Serves 8-10
