Make sure that your butter is at room temperature. It will help the butter and sugar become light and fluffy when creaming together. This is an important step in achieving a crisp cookie.

Ingredients

  • ½ cup/4 ounces/116 grams unsalted
  • butter, room temp
  • ½ cup/3½ ounces/100grams granulated
  • sugar
  • ¼ cup/1¾ ounces/50grams light brown
  • sugar
  • 1 large egg, room temp
  • 1 tsp. pure vanilla extract
  • 1 cup/4½ ounces/130grams all purpose
  • flour
  • ½ tsp./3 grams fine grain sea salt or 1
  • tsp. /3 grams kosher salt
  • ½ tsp. baking soda
  • ½ cup/2 ½ ounces/70 grams chopped
  • nuts, optional
  • 1 cup/210 grams/7½ ounces semi sweet
  • chocolate chips

Instructions

    Preheat oven to 325˚F convection or 350˚F regular. Arrange 2 equally spaced oven racks. Prepare 2 cookies sheets with parchment.

    In a standing mixer, cream the butter and sugars well, about 3 minutes, scraping down the sides several times.

    In a separate bowl, mix together the flour, salt, and baking soda.

    Add the egg and vanilla, mix well, making sure to scrape down the sides and bottom of the mixer bowl.

    Add the flour mixture to the butter/sugar/egg mixture. Mix well.

    Fold in the nuts and chocolate chips.

    Drop cookies using a spoon for small cookies or large cookie scoop to make 3 ½ inch cookies.

    Bake for 12-17 minutes, depending on the size of the cookies. Makes 12 large cookies or 24 small.
