This salad is the perfect accompaniment to grilled meats or fish. When carrots are in season they do not need to be peeled, just give a good scrub.

Ingredients

  • 2 cloves of garlic, crushed and chopped
  • with a knife, medium-fine
  • 4 Tbs. extra virgin olive oil
  • 2 Tbs. lemon juice
  • 1 tsp. kosher salt
  • ½ tsp. ground cumin or 1 tsp. whole cumin
  • seeds, crushed
  • 2 Tbs. minced parsley
  • 1-2 tsp. harissa paste
  • 1 bunch of carrots with the tops, tops
  • trimmed to about ½ inch, scrubbed (not
  • peeled) and halved lengthwise
  • Olive oil and kosher salt for the carrots
  • 2 just ripe avocados, cut into large pieces
  • ½ cup mint leaves (left whole)
  • 1 jalapeno or serrano chili, sliced in thin
  • rounds

Instructions

    Preheat a grill to medium heat.

    In a medium bowl, mix all the dressing ingredients together. Set aside.

    Toss the carrots with a little olive oil and sprinkle with kosher salt (I do this on a parchment lined prep tray) and place on the grill cut side down. Cook for a few minutes, turn and continue turning and cooking for about 15 minutes or so, the carrots should be lightly charred in spots and fork tender.

    Transfer carrots to the bowl with the dressing and toss to coat.

    Arrange the carrots and avocado on a serving plate, spoon any leftover dressing from the bowl and sprinkle with mint and chili slices. Serves 6

Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.
