Individual Glazed French Apple Tarts Recipe

This is a very simple dessert to make when you are in a hurry. Just remember to defrost the puff pastry overnight in the fridge. I always have a box in my freezer.

Ingredients

  • 4 Granny Smith apples
  • 1 lb store-bought puff pastry, defrosted
  • overnight in the fridge
  • ½ cup coarse sugar, “sugar in the
  • raw” (or regular sugar)
  • ½ stick/4 tbsp/2 oz/56 g unsalted butter,
  • chilled and cut into small bits
  • For the Glaze:
  • ½ cup apricot jam
  • 2 tbsp Brandy or Grand Marnier or any
  • liquor, optional

Instructions

    Preheat the oven to 400˚F and line a large baking sheet with parchment paper.

    Peel apples and cut them in half through the stem. Remove the core (I use a melon baller) and, with a sharp knife, remove the stem. Cut each apple half crosswise into ¼-inch slices.

    Unwrap the pastry and cut into 8 even squares. Place slices of each apple half on a diagonal on each square, arranging the slices so that they are spread out a little but overlapping one another. Transfer each square to the parchment-lined tray and crimp the edges of the pastry around the apples.

    Evenly distribute the sugar over each individual tart (about 1 tbsp per tart).

    Evenly distribute the butter bits on top of each tart.

    Place in the oven and cook for 45 minutes.

    In the meantime, make the Glaze: In a small saucepan, heat the jam and liquor, if using, together until melted, set aside.

    When the tarts come out of the oven, immediately brush the glaze on top of each tart, covering the apples and crust. Serves 8 Note: The 454g box of PC brand puff pastry comes in 2 225g individual packages. Each package will make 4 tarts. Feel free to use only half the box of puff pastry and cut the recipe in half to make 4 tarts.
