Ice Box Cookies Recipe

These little cookies are exactly what they sound like. This batch makes over 150 cookies! But the best part of the recipe is that you only need to bake 1-2 dozen at a time, the rest of the dough stays in the freezer until you want a fresh batch of cookies. These cookies are perfect for a party. My grandmother used to make these for my kids when they were little and they loved them and so did all their friends.
Ingredients
- 1 lb (4 sticks) salted butter, room temp
- 1 cup brown sugar
- 1¾ cup white sugar
- 4 eggs
- 1 tsp. vanilla
- 7 cups (2 lb) flour
- 2 tsp. baking soda
- 1 tsp. baking powder
- About 1 cup rainbow or chocolate sprinkles
Instructions

In a standing mixture, starting on slow speed and gradually moving faster, cream the butter and sugars together until light and fluffy, 3-4 minutes.

Add the eggs and the vanilla

In a large mixing bowl mix together the flour, baking soda and baking powder, gradually add this to the butter mixture. Mix well.

Empty contents onto work surface, divide the dough into 8 even pieces.

Fold in a 2-3 Tbs. of sprinkles into each piece of dough. I don’t do this in the mixer because I put different sprinkle in each piece of dough.

Roll each piece of dough into a log, about 2-inches in diameter, wrap tightly in plastic wrap and freeze.

When ready to bake, remove a log from the freezer. Preheat the oven to 350˚F and line a cookie sheet with parchment.

Using a sharp knife, cut the log into ½-inch coins and lay them on the sheet.

Bake for 8-9 minutes, cool on a rack. Makes 150 or so cookies!
