Ginger Fried Rice with Garlic Bok Choy Recipe

Forbidden Black rice can be found at most health food or specialty stores. It is nutty and chewy when cooked. It is perfect for this gut loving stir fry. Black rice contains intense amounts of the antioxidant-anthocyanin. It is actually the highest source of grains that exist. Anthocyanin is very important when it comes to fighting inflammation specifically.
Ingredients
- For the rice
- 1 cup black rice, also called forbidden rice
- 2 tbsp. avocado or grapeseed oil
- 1 tbsp. grated fresh ginger
- For the Bok Choy
- 2 tbsp. avocado or grapeseed oil
- 1 onion, sliced in half moons
- 1-2 tsp. grated fresh ginger
- 2 cloves garlic, smashed and chopped a
- little
- About 12 Bok choy, ends removed and
- sliced lengthwise in half, washed well
- Sea salt to taste
Instructions

Cook the Black Rice: I use a rice cooker but if you are using a pot, combine rice, 1¾ cups water and pinch of salt in a medium size pot; bring to boil over high heat; cover, reduce heat and simmer until rice is tender, about 30-35 minutes. Let sit covered for 5 minutes. Drain any excess water. Set aside.

For the Bok Choy: Heat the oil in a med size pan over med heat, add onion and cook until slightly golden. Add the ginger and garlic, sauté for 1 minute. Add the bok choy, sauté for 3-5 minutes or until wilted, remove from the pan, set aside.

For the Rice: Add the oil to the same pan, heat, add the ginger, sauté for 1 minute, add the rice, stir fry so that the rice gets completely coated in the ginger.

Add the cooked bok choy to the rice in the pan, sauté until combined, season with a few pinches of sea salt, remove from the pan. Serves 4
