Use cooked and COLD rice for this

Ingredients

  • 2 Tbs. canola or sunflower oil, separated
  • 2 eggs, beaten
  • 2 cups frozen mixed veggies*
  • 1 large garlic clove, minced or 1 cube
  • frozen minced garlic
  • 1 Tbs. finely grated fresh ginger or 1 cube
  • frozen minced ginger, optional
  • 2 green onion, root end removed and
  • discarded, sliced in tiny pieces.
  • 2-3 cups very cold cooked rice* (from 1
  • cup dried uncooked rice)
  • 2 Tbs. light soy sauce or light tamari
  • Optional Ingredients
  • 2 cups shredded cooked chicken
  • 1 block tofu, mashed with a fork

Instructions

    In a large fry pan or wok, heat only one tsp. of the oil over med- high heat.

    Add the beaten eggs, scramble, remove the cooked eggs to a plate.

    Add the rest of the oil to the pan.

    Add all the frozen veggies and the garlic and ginger, fresh or frozen.

    Cook until the veggies have defrosted and heated. This will take about 10 minutes, toss them around many times, so they defrost evenly and faster. Make sure that the garlic and ginger gets mixed evenly.

    Add any Optional Ingredients if using.

    Add the sliced green onion, toss. Cook for one minute.

    Add rice, stirring until the rice is heated through (about 3-5 minutes).

    Stir the egg into the rice mixture.
