This salad will awaken your taste buds with its flavour and textures. It is healthy, will cool your palate and goes with all dishes.

Ingredients

  • 2 under-ripe mangos, peeled
  • 1 green apple, not peeled
  • 1 (14-oz) bag coleslaw mix* (about 7-8
  • cups)
  • For the Dressing
  • ½ cup plain low-fat Skyr or Greek yogurt
  • Large handful of cilantro leaves, minced
  • 2 tbsp unseasoned rice vinegar
  • 2 tbsp freshly squeezed lime juice
  • 2 green onions, cut up into 3-4 pieces
  • About 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tbsp grapeseed oil
  • 1 jalapeño or serrano pepper, stemmed
  • and cored

Instructions

    Make the Dressing: Mix all the dressing ingredients in a blender and blend until smooth. Set aside.

    Using a mandolin or slicer with the julienne blade on, slice the mango into thin matchsticks (you can also do this by hand) and place in a mixing bowl. Slice the apple the same way, place in mixing bowl. Add the coleslaw mix.

    Drizzle the dressing over and gently toss.

    Serve immediately or store in the fridge for 24 hours. Serves

    *If you prefer to make your own coleslaw mix, mix together 6-7 cups of shredded cabbage (red, green, savoy or napa) plus 1 cup shredded carrot.
