Fattoush salad is a Lebanese salad made with toasted pita, parsley, mint, cucumbers, tomatoes, and lettuce. Adding sumac at the end gives this salad an authentic taste. Sumac is a middle-eastern spice that is red in colour and has an earthy lemony taste.

Ingredients

  • For the Salad
  • 1 bunch romaine lettuce or 1 bunch of
  • kale, ribs trimmed to the bottom of the
  • leaves, leaves shredded
  • 2 tbsp. olive oil
  • 1 tsp. zaatar
  • ¼ tsp. kosher salt
  • 1 small pita, left closed
  • 1 cup parsley leaves
  • ¼ cup mint, leaves
  • ½ english cucumber, diced small
  • 2-3 roma tomatoes, diced small
  • For the Zaatar Tahini Dressing
  • 2 Tbs. lemon juice
  • ¼ cup olive oil
  • 1 Tbs. red wine vinegar
  • 1 (small) Tbs. tahini
  • ½ tsp. zaatar
  • 1 clove garlic, minced
  • Salt and pepper
  • Sumac for sprinkling over finished salad,

Instructions

    Preheat the grill to med-high.

    In a small bowl (I use a glass measuring cup) mix together the Zaatar Tahini Dressing ingredients, set aside.

    In a large bowl, mix together the oil, zaatar and salt (for the salad). Dip a brush in this mixture and brush the pita with some of this mixture. Once the pita has been brushed, grill the pita on both sides until both sides are coloured and toasty, it takes a few minutes each side. Set aside. Once cool, break it into small pieces, set aside.

    In that same large bowl, add all the salad ingredients. Drizzle with some of the Zaatar Tahini Dressing , taste, add more dressing if needed. Top with pita chips and sumac. Serves 6

How to Store
Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.
