vinaigrette This traditional bistro salad has all the right ingredients that come together to make the perfect salad. Feel free to add a poached egg to the top of each plate.

Ingredients

  • For the Dressing
  • ⅔ cup/150 ml vegetable oil
  • ⅓ cup/75 ml extra virgin olive oil
  • 1 tbsp water
  • 1 tbsp walnut oil
  • ¼ cup black currant vinegar (if you can't find
  • it, use balsamic, sherry or blueberry vinegar
  • instead)
  • 1 tbsp honey
  • 1 tbsp/15 g Dijon mustard
  • Salt and freshly ground pepper to taste
  • For the Salad
  • 4 Belgium endives, slivered horizontally into
  • less than ¼ inch slices
  • ½ head of frisée lettuce, chopped into very
  • small bite-sized pieces
  • 1-2 tbsp minced shallots
  • ½ cup finely chopped walnuts and a few left
  • whole for garnish
  • ½ cup large juicy black raisins
  • ½ cup chopped parsley
  • About ½ cup crumbled blue cheese (I like
  • Benedictine Blue for this salad) or ricotta
  • salata

Instructions

    To Make the Dressing: Mix all dressing ingredients together.

    For the Salad: Mix together the endive, frisée, shallots, chopped walnuts, raisins and parsley,

    Toss salad with some of the dressing, taste and use more if needed.

    Garnish with blue cheese or ricotta salata (if using), walnut haves and freshly ground pepper. Serves 4-6.
