Egyptian Tomato Salad Recipe

This salad is so easy to make and gets better as it sits. Its the perfect do-ahead tapas or side dish!
Ingredients
- Oil Mixture
- 1 small shallot, peeled and finely chopped
- 1 clove of garlic, minced
- 4 Tbs. best quality extra virgin olive oil
- Kosher salt and freshly ground pepper
- 6 medium sized JUST RIPE tomatoes* (2 boxes
- Campari tomatoes) or 2 boxes cherry
- tomatoes.
- Juice of ½ lemon
- Coarse sea salt for sprinkling
- 1 handful of chopped herbs (parsley, chervil,
- oregano, or mint - or a combo)
- ¼ cup toasted pine nuts, optional
Instructions

Mix together in a small bowl, shallot, garlic, oil, pinch of kosher and pepper, set aside

Slice the stem of the tomato off with a knife, making a flat surface (the tomato will sit flat on a plate on this side. Make another (tiny) slice off the opposite side (making another flat surface), now slice the tomato in half (between the two slices), repeat with all the tomatoes. Place the tomatoes in a marinating bowl or dish.

Pour all the Oil Mixture over the tomatoes, toss to coat. Let the tomatoes sit at room temperature for 2-3 hours, juice from the tomatoes will accumulate, toss the tomatoes several times during the marinating.

When ready to serve lay each half (the ends where you sliced a small slice side-down on the plate - the center of the tomato facing upwards) pour all (or most) of the Oil Mixture and any accumulated juices over the tomatoes. Squeeze the half lemon over the tomato halves, sprinkle with coarse sea salt, more pepper, herbs and pine nuts.
