Dark Chocolate Medjool Date Turtles Recipe

This incredible dessert is a fresh take on an old favourite. It satisfies every sweet tooth while keeping it healthy!
Ingredients
- 12 medjool dates, pit removed
- 36 unsalted pecan halves, cashews or
- almonds or any unsalted nut of your choice
- 100g bar of dark chocolate (70%) (you may
- need more, depending on how generous you
- are)
- 1 few Tbs. ground pistachio, optional
- A few Tbs. shredded unsweetened coconut,
- optional
- Pinch of coarse sea salt (I like Maldon)
Instructions

Stuff each date with 3 nuts, living the nuts to hang out a little (it should look like turtle head and two feet). Place them spaced out on parchment lined cookie sheet.

Break up the chocolate and place in a glass bowl. Bring a small pot of water to boil and place the glass bowl on top of the pot, turn the heat down and allow the chocolate to melt by way of this “double boiler.” Remove the glass bowl from on top of the pot, let cool for about 10 minutes or melt the chocolate in the microwave.

Drizzle each date to coat, or mostly coat (I like to leave the nuts a little visible) with chocolate. Sprinkle with either ground pistachio or shredded coconut or neither.

Refrigerate for about 10-15 minutes until the chocolate is almost solid and then sprinkle with sea salt. If you sprinkle too early, the salt will melt into the chocolate and if you sprinkle too late, the chocolate will be solid and the salt will not adhere to the chocolate.

Refrigerate until ready to serve. Bring to room temp for about one hour before serving. Makes 12
