Dark Chocolate Chip Bran Muffins Recipe

I use Natures Path Smart Bran cereal for this recipe, you can also use Kellogg’s All Bran cereal
Ingredients
- ¾ cup Bran Cereal
- 1 cup milk, any kind
- ⅔ cup whole wheat flour or spelt flour
- ⅓ cup coconut sugar or any sugar
- 2 tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. salt
- ½ tsp. cinnamon
- 1½ cups oat bran
- ⅔ cup dark chocolate chips (or semi
- sweet)
- 1 large apple, peeled and grated or diced
- small OR 1 ripe banana, mashed
- 1 egg, lightly beaten
- 2 tsp. of vegetable oil
- ½ cup unsweetened apple sauce
Instructions

Preheat the oven to 350ºF. Spray a 12-cup or mini 24-cup m muffin tin with oil spray.

Mix the Bran Cereal and the milk in a small bowl and let stand while you prepare the other ingredients.

In a large bowl mix the flour, coconut sugar, baking powder, baking soda, salt, and cinnamon. Stir in the oat bran, raisins, and apple or banana.

In a small bowl, combine the egg, vegetable oil, and apple sauce. Stir in the Bran-Milk mixture. Stir this mixture into the dry ingredients.

Spoon mixture into the prepared muffin tin.

Bake for 20 minutes for the larger muffins or 15-18 minutes for the mini muffins. Bake until golden on top.

Cool for 5 minutes in the tin. Remove the muffins and let cool on a wire rack. Makes 24 mini or 12 large muffins
