Cold Soba Salad with Sesame Soy Vinaigrette Recipe

This noodle salad comes together really fast and lasts a few says in the fridge.
Ingredients
- For the Dressing
- 1 small shallot, minced
- 2 Tbs. tahini
- 2 Tbs. sesame oil
- ¼ cup rice wine vinegar
- 3 tbsp. grapeseed or avocado oil
- 1 Tbs. orange juice
- 1-2 tbsp. cold water, more to thin the
- dressing
- For the Veggies
- 1 romaine heart, shredded
- ½ red pepper, julienned
- 1 carrot, julienned or shredded
- 2 green onions, thinly sliced in 2 inch long

- 8 cherry tomatoes, cut in half
- ¼ of an English cucumber, cut in half,
- seeds scooped out and julienned into 2

- 4 mushrooms, thinly sliced
- 2 cups broccoli florets cut into tiny pieces
- 2 Tbs. toasted sesame seeds, black looks

- ½ of a 250g bag of soba noodles, I like
- King Soba brand, or one paper tied

Boil the soba noodles: Remove paper ties. Bring water to a rolling boil and slowly submerge noodles then reduce to medium heat. Gently separate with a fork. Cook for 5 – 6 minutes. Do not overcook! Drain and rinse well with cold water.

In the meantime, make the dressing by mixing all ingredients together, set aside.

Toss the soba noodles with all the veggies and some of the dressing, taste, add more dressing as needed. Sprinkle sesame seeds through the salad and some more on top. Serves 2-4

- Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.
