Cold Salad Rolls Recipe

These are the perfect do ahead app. They are easy to make and taste great with Tahini ‘peanut” Sauce.
Ingredients
- 1 package of firm or extra firm tofu or 24
- cooked shrimp
- About 3 ounces vermicelli rice noodles
- Spicy Lime Dressing
- 1½ Tbs. fish sauce
- 1½ Tbs. rice vinegar
- 1-2 jalapeno peppers - or small green
- chilies, seeded and finely chopped
- 2½ Tbs. sugar
- For the Assembly
- 12 8.5-inch (large) rice paper rounds
- 2 heads of Boston lettuce, cleaned, dried,
- and tough centre removed
- 8 green onion, julienne
- Handful of mint leaves
- Handful of cilantro leaves
- 2 carrots, julienne
- ½ of an English cucumber, cut in half
- lengthwise, seeds scooped out, julienne
Instructions

If you are using tofu: cut the tofu into matchsticks. If using shrimp, cut them in lad so they are butterflied open.

In a small bowl combine all ingredients of the Spicy Lime Dressing together, set aside

Bring a kettle full of water to boil. Place the vermicelli noodles in a large bowl, pour the boiling water over and let sit until softened, about 5 minutes, drain, rinse with cold water.

Prepare your work surface. Have all your veggies, noodles and tofu ready.

Pour some boiling water into a flat container, add one rice paper round at a time. Let sit until softened, about 2-3 minutes, carefully lift out of the water and lay it down on your work surface.

For the Assembly: Place a lettuce leaf on the lower half or the rice paper, leaving 1 inch border. Place some noodles (not too much) on the end close to you, leaving a border on the sides Then a small amount of each veggies and herb and 4-5 pieces of tofu or shrimp.

Roll the rice paper once over the veggie tofu mixture, fold in both ends over the veggies and then continue rolling, lay the finished roll on its seem, cover with a damp towel and repeat until you have used up all the ingredients. Make 16 half rolls

- Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.
