This is easy week night salad. The fennel gives this salad a beautiful lift and crunch. Fennel, lemon and olive oil make a perfect flavour combination.

Ingredients

  • For the Dressing
  • ⅓ cup extra virgin olive oil
  • ⅓ cup freshly squeezed lemon juice
  • 1 small clove garlic, minced as fine a
  • possible (on a small grater or a
  • Microplane or garlic press)
  • Kosher salt and lots of freshly ground
  • pepper
  • For the Pickled Red Onions
  • ¼ red onion
  • 1 tbsp red wine vinegar
  • ½ tsp sugar
  • ¼ tsp kosher salt
  • For the Salad
  • 1 bulb fennel
  • 1 box baby arugula
  • To Serve, optional
  • 1 or 2 Farinata, Delicious Dish

Instructions

    Make the dressing in a jar or bowl, set aside.

    Make the Pickled Red Onions: Shave or cut the onion into paper thin slices. Place in a small bowl. Mix in the vinegar, sugar and salt, toss. Set aside and toss a few times while preparing dinner.

    Remove top part of the fennel and discard. Cut fennel in half though the length and then cut each half once more so you have four quarters, remove the hard core with a sharp knife. Shave the fennel into paper thin slices. (I use the finest setting on a mandolin, but a vegetable peeler will also work or slice it by hand.) Set aside.

    When you are ready to serve the salad, in a large mixing bowl toss together the fennel and arugula.

    Add the dressing to the salad (you will most likely need it all), toss.

    Distribute the salad on Farinata, Delicious Dish, individual plates or on a larger platter. Scatter the red onions on top of the salad.

    Serve immediately. Serves 4.

Store in an airtight container in the refrigerator. Most sides keep well for 3-4 days. Dress salads just before serving to keep them crisp.
