Sweet Potato Crusted Quiche with Greens and Goat Cheese Recipe

This beautifully simple quiche is perfect served warm or at room temperature for a light dinner or lunch. It is naturally gluten free and the sweet potato crust pairs beautifully with the tartness of the goat cheese. Adding yogurt to the eggs makes the batter very smooth and creamy.
Ingredients
- 2 tbsp olive oil, divided
- 1 tbsp unsalted butter
- 2 large sweet potatoes, peeled and
- grated
- 2 tsp kosher salt
- 1 cooking onion, peeled and sliced

- 1 bunch of lacinato kale, ribs removed
- and leaves torn into bite-size pieces
- 12 large eggs
- 1 cup plain yogurt
- 1 113 g/4 oz log of goat cheese,
- crumbled
Instructions

Heat oven to 300˚F. Grease a a 9-inch pie plate, quiche dish or 8-9-inch springform pan.

Heat 1 tbsp. of oil and ½ tsp. salt in a large skillet and cook the potato until soft and mostly cooked, about 10 minutes. Let cool.

When cool enough to handle, press the cooled potato into the sides and bottom of the prepared pan.

Heat the last tbsp of oil over medium heat, and the butter in the skillet . Add the onion and ½ tsp. salt, cover the pan and cook, stirring occasionally for 5 minutes. Uncover and raise the heat to medium-high and cook, stirring until well caramelized, about 10 minutes.

Add the kale, a handful at a time, and cook until softened, about 5-10 minutes. Let cool.

In a large mixing bowl, beat together the eggs, yogurt and the rest of the salt. Add the cooled kale mixture, stir into the egg mixture. Pour into the prepared sweet potato crust and dot the goat cheese all over the top.

Bake for 60-70 minutes or until the quiche is firm to the touch.

Let rest for 10 minutes before slicing. Serves 6.
