Sweet and Spicy Kale Chips Recipe

These are perfect for those times when you are craving chips and other savoury or sweet crunchy things. Even the kids seem to love them. The trick is not to overload the baking trays, the kale cooks a lot better when each leaf has a little space. Use the convection setting on your oven and you can put 2-3 cookie sheets in the oven at once. Just remember to rotate the sheets halfway.

Ingredients

  • 1 bunch black kale, also called dinosaur
  • kale or Lacinato kale, ribs removed
  • 1 tbsp. olive oil
  • 1 ½ tsp. apple cider vinegar
  • 2 tbsp. sesame seeds
  • 1 tbsp. hemp seeds
  • ¼ tsp. chipotle powder
  • 1 tsp. flaked Maldon sea salt (if you don’t
  • have it, use ¾ tsp. fine grain sea salt)
  • ½ tbsp. coconut sugar

Instructions

    Preheat oven to 400˚F.

    Wash and dry the kale well. Use a salad spinner to make sure it is really dry. It should not be wet.

    Tear the kale leaves into large bite size pieces. Place in a large mixing bowl.

    Drizzle the oil and apple cider vinegar over the leaves and massage until the leaves have softened a little. Sprinkle with sesame seeds, hemp seeds, chipotle and salt. Mix well.

    Line 2 baking trays with parchment and spread the kale evenly between the two sheets, making sure not to overlap the leaves.

    Bake for 10 minutes, rotating the sheets halfway through. The leaves should have paled a little and not be “fresh” looking.

    Remove from the oven, the kale will crisp a little more as it cools. Makes 3-4 cups
