Stir-Fried Chinese Garlic Green Beans with Protein Variation Recipe

This traditional Chinese fried green bean recipe is super easy and really delicious. The whole family will love this dish! The hotter the oil, the less the oil will absorb, so make sure it is good and hot. If you want to add protein (very traditional), you can add ground chicken, pork or mashed tofu.
Ingredients
- 1 lb green beans, root end removed (you can
- leave the tail end on)
- ½ cup neutral oil for frying
- 8 cloves garlic, minced
- 1 tsp kosher salt
- Optional spice: ½ tsp chili flakes, 1 tsp
- fermented chili bean paste, 2-3 whole dried
- chilies (arbol) roughly chopped or 1 minced
- fresh chili

- 115 g/ ¼ lb ground chicken, pork or mashed
- extra-firm tofu
- 1 tsp light soy sauce
- 2 tsp dark soy sauce
- 1 tbsp Shaoxing wine or mirin
- Pinch of sugar
Instructions

In a narrow-bottomed wok or pot, heat oil over medium-high heat.

Add the green beans and stir fry for 1 minute. (I do this in 2-3 batches.) Transfer to a paper towel.

Carefully remove the oil from the wok, leaving a little behind. Add the garlic to the oil, stir fry for 1 minute. Add optional spice if using.

Add back the green beans and stir fry for 1 minute, then add the salt. Protein variation: Add minced protein at the end of Step 3 along with the soy sauces, Shaoxing wine or mirin, and sugar. Stir fry until there is no liquid left in the pan and the protein is opaque. Then continue with Step
