Sour Cream and Onion Smashed Potatoes Recipe

Ya, you heard it! Sour cream and onion chips have finally met the smashed potato! A dream come true.
Ingredients
- 2 lb of baby Yukon gold potatoes
- Salt for the potato cooking water
- For the Sour Cream and Onion Mix
- ¼ cup (half a stick) unsalted butter, melted
- 1 cup sour cream
- 1 tbsp dehydrated onion flakes or dehydrated
- granulated onion
- 2 tsp Dijon mustard
- A few tbsp warm potato cooking water
- 2-4 tbsp olive oil
- 1-2 tsp kosher salt for sprinkling
- 1 bunch chives, minced
Instructions

Place potatoes in a pot of cold salted water, bring to a boil (lid on or off) and cook until potatoes are fork tender (about 20-30 minutes). Before draining, reserve some potato cooking water. Drain potatoes in a colander and let them cool a little.

Preheat the oven to 400˚F.

In a medium-sized bowl, mix together the melted butter, sour cream, onion flakes, Dijon mustard and a few tbsp of potato water.

Dump the potatoes onto a parchment-lined cookie sheet. Using the heel of your hand or the bottom of a mug, smash open the potato so that it splays open and the skin is broken (don’t over push or the potato will fall apart).

With a pastry brush (or your hands), spread the sour cream mixture over the smashed potatoes. Drizzle with olive oil and sprinkle with salt.

Bake for 40 minutes or so, they should be golden and crispy.

Remove from the oven, transfer potatoes to a serving dish and sprinkle with chives.
