Sesame Peanut Noodles Recipe

This classic noodle dish comes together super fast and really hits the spot! Feel free to use any Asian noodle you prefer. I often use rice or udon noodles in place of traditional Chinese egg noodles. If you are allergic to peanuts, replace the peanut butter with additional tahini.
Ingredients
- For the Noodles
- 454 g Chinese egg noodles, dried or fresh (or
- udon or soba)
- A little sesame oil
- 1 tbsp neutral oil (grape seed, sunflower,
- canola)
- For the Sesame Peanut Sauce
- 2 tbsp sesame oil
- 4 tbsp low sodium tamari or soy sauce
- 2 tbsp rice vinegar
- 2 tbsp tahini
- 1 tbsp smooth peanut butter
- 1 tbsp brown sugar
- 1-inch piece of ginger, finely grated
- 2 cloves garlic, minced
- Chili-garlic paste or chili oil (I use Sambal Olek
- or Lee Kum Kee Chiu Chow Chili Oil), to taste
- (I use about 2 tsp)
- Water to thin it out
- For Serving
- 3 green onions, sliced thinly on the bias
- 1 tbsp toasted sesame seeds
- Chili-garlic paste or chili oil, to taste
- ½ English cucumber, halved, seeds scooped
- out and julienned
Instructions

Bring a large pot of water to boil. Cook the noodles according to the package directions. Drain, rinse with cold water and drain well. Toss with a little sesame oil.

For the Sesame Peanut Sauce: In a mixing bowl, mix all the ingredients together.

Heat a wok or large fry pan on medium heat.

Add the neutral oil. Add the sauce, stir fry for 1 minute or so. Add a little water if the sauce is very thick.

Add the cooked noodles, toss to coat well.

Add the green onion and toasted sesame seeds. Toss. Transfer to a serving dish.

Serve with additional hot sauce and cucumber.

The Sesame Peanut Sauce can be made up to 1-2 days in advance and stored in the fridge. The noodles can be cooked and coated with sesame oil several hours ahead of time.
