Roasted Spiced Cauliflower or Broccoli Recipe

Roasted cauliflower is a super easy veggie to make, great the next day cold and very healthy! You can do this exact recipe with broccoli too! Feel free to sprinkle the cauliflower or broccoli with either the Cajun Rub or Everything-but-the-Bagel Rub.
Ingredients
- 1 head cauliflower (or broccoli), cut into
- bite size florets
- 2 Tbs. olive oil
- 1 tsp. kosher salt
- Optional
- 1 tsp. Cajun or Everything-but-the-Bagel
- MIx, Delicious Dish
Instructions

Preheat oven to 400˚F.

First, pull the leaves away from the base of the head of the cauliflower and toss them. Wedge a knife into the core from the bottom, and split the core in half, using your hands to pry it apart if necessary. Once you've removed the stem, the cauliflower will naturally fall apart into large florets. You can also use you knife to cut the florets off of any larger stem pieces. Cut the florets into smaller pieces. Only use the florets.

Line a baking sheet with foil or parchment paper. Place the cauliflower florets in the center of the baking sheet. Drizzle with the olive oil, using your hands, toss the cauliflower so that the oil coats each piece. Sprinkle with the salt, optional Spice Mix and pepper. Toss the cauliflower again, so that the spices coat the cauliflower well.

Roast for 40 minutes. The cauliflower should be golden brown and a little crispy.
