Passover Lemon Bars Recipe

These lemon bars are super easy and assemble really quickly. I make a double batch of Passover Graham Cracker Crumbs and have them on hand for all my “crust” needs.
Ingredients
- For the crust
- 1 batch Passover Graham Cracker Crumbs,
- delicious dish
- For the lemon curd
- 4 eggs
- 1¼ cup sugar
- 3 tbsp cake meal
- 1 tsp potato starch
- ⅛ tsp salt
- 1 tbsp packed lemon zest
- ¾ cup fresh lemon juice (3-4 lemons) (use fine
- microplane grater)
- 1 tbsp Passover icing sugar for garnish
Instructions

Preheat oven to 350˚F

In a 9*13 inch baking pan, line the bottom and sides with foil (yes, foil), letting it overhang. Spray the sides (not the bottom) with cooking spray.

Press Passover Graham Cracker Crumbs into pan.

In a mixing bowl, whisk eggs, sugar, cake meal, potato starch, and salt together for 1 minute or until smooth. Whisk in lemon juice and zest.

Pour the lemon topping over the crust, place in the oven and bake for 20-25 minutes. When done, the toping should be set and will no longer jiggle when the pan moves.

Cool on a metal rack for at least 1 hour (or in the fridge for faster results). Lift the bars out of the pan with the foil, separate the foil from the bars with a spatula and slice in triangles or squares.

Sprinkle with icing sugar. Makes 24 smaller bars
