This easy simple dish is a perfect accompaniment to almost anything. It goes so well with a braised meat such as short ribs, brisket or pot roast. It also pairs nicely with a roasted bird like chicken or turkey and is delicious with fish as well. Not to mention that any vegetarian at your table would love this as a main course!

Ingredients

  • 2 Tbs. olive oil
  • 2 garlic cloves, finely chopped (use a knife)
  • 1 19-oz can of white beans, drained and rinsed
  • 2 cups frozen kale (or spinach or rapini), I use
  • ½ tsp. kosher salt
  • A few grinds of fresh pepper
  • 4 Tbs. of water, or more

Instructions

    In a large fry pan, heat oil over med heat, add garlic, sauté until fragrant and starting to brown (do not let it burn), about 30 seconds.

    Add the white beans, toss with the oil and garlic, while tossing, mash some of the beans.

    Add the frozen kale, toss and cook until the kale has defrosted. Add the salt and pepper and water as needed to loosen the mixture to a desired consistency. Mash more of the beans, as much as you want. I usually mash about ¾rs of the beans adding water as needed.

    Taste for salt and pepper.

    Serve hot. You may need to add more water as you are keeping it warm or reheating. Serves 4
