Marinated Greek Spicy Feta Recipe

Feta cheese takes so well to long marinating. Serve this soft feta on a crostini, on a cucumber or simply skewered with toothpicks.
Ingredients
- About ½ lb good quality Greek feta
- ½ lemon, sliced into thin pieces, cut the pieces
- in quarters, try to remove seeds
- ½ tsp. good quality oregano or za’atar
- 1 red or yellow hot chili pepper, sliced in thin
- rounds and then chopped a little OR a pinch
- of chili flakes
- 2 Tbs. good quality extra virgin olive oil
- 20 slices of baguette, halved, grilled,
- OPTIONAL
- Handful of arugula or baby spinach,
- OPTIONAL
- 1 English cucumber, sliced in half, seeds
- scooped out and cut into 1-inch half moons,
- OPTIONAL
- A few Tbs. minced chives
Instructions

Cut the feta into bite size pieces, trying to keep them into a square or rectangular shape - best to use a very sharp knife. Place in glass bowl.

Tuck lemon slices all around the feta. Sprinkle with za’atar and chili flakes. Drizzle with oil. Gently mix.

Let marinate at room temperature for up two hours or refrigerate up to two days.

Discard lemon slices.

Serve feta on a piece of crostini lined with an arugula leaf and sprinkled with chives OR serve feta squares sitting in a piece of scooped-out English cucumber half moon, sprinkled with chives OR serve feta skewered with toothpicks, sprinkled with chives. Serves 6
