Margarita Shrimp Skewers Recipe

can be done with salmon, chicken or tofu This amazingly flavourful rub is delicious on fish, chicken, tofu as well. You can make the dry rub only and use it on steaks.
Ingredients
- For the Dry Rub
- 1 Tbs. packed brown sugar
- 2 tsp. instant espresso powder
- 2 ½ tsp. Kosher salt
- 2 tsp. ancho chili powder
- 1 tsp. granulated garlic
- 1 tsp. dried oregano leaves
- ½ tsp. coarse to med grind black pepper
- ½ tsp. ground coriander
- ⅛th tsp. cayenne
- 2 tbsp. olive oil
- Juice of 2 limes
- 1 tbsp. honey
- 2 limes - thinly sliced for in between the
- shrimp on the skewers
- 1 ½ pounds of jumbo shrimp (16 to 20 per
- pound), peeled and deveined*
- 8 metal or bamboo skewers (soaked in
- water for a few hours if using bamboo),
- try to find flat skewers.
- Handful of cilantro leaves, roughly
- chopped.
- Lime wedges
Instructions

Mix all Dry Rub ingredients together in a large bowl.

Add the olive oil, lime juice, and honey.

Place the shrimp (chicken, salmon or tofu) in the bowl with the spice mix. You can marinate for up to 2 hrs or cook right away.

Fire up your grill to medium high.

Place the shrimp (chicken, salmon or tofu) on the skewers, and thread a slice of lime (fold it in half) in between each shrimp (chicken, salmon or tofu). Place on the grill.

Shrimp: Spray the hot grill well. Grill until charred on one side, flip and repeat. It will take 2-4 minutes a side. There are 2 sides.

Chicken: Spray the hot grill well. Grill for approximately 5 minutes on the first side, 5 minutes on the opposite side, 2-3 minutes on a third side and 2-3 minutes on the fourth side.

Salmon: Spray the hot grill well. Grill for 2-3 minutes on each side, there are 4 sides.

Tofu: Spray the hot grill well. Grill for 2-3 minutes on each side, there are 4 sides.

Remove from the grill, place eon a platter scatter with cilantro and lime wedges. Serves 4-6 *if you are using chicken, salmon or tofu, cut into 2 inch cubes.
