Herbed Lentils with Haloumi and Yellow Tahini Recipe

This beautiful lentil salad can be served as a vegetarian main course or as a side to any grilled or roasted protein.
Ingredients
- For the Lentil Salad
- ¼ cup dry lentils (I like small green or brown
- lentils) or ¾ cup canned lentils, drained and
- rinsed
- Handful of parsley or cilantro leaves (or both),
- finely chopped
- 6 mint leaves, finely chopped
- 1 green onion, finely chopped
- ½ -1 whole long red chilli pepper, minced
- 1 small clove garlic, minced
- Zest of half lemon
- 1 tbsp. lemon juice
- 2 tbsp. olive oil
- Kosher salt and freshly ground pepper to
- taste
- For the Yellow Tahini
- ¼ cup tahini
- 3 tbsp. lemon juice
- 2 tbsp. olive oil
- ½ tsp. ground turmeric
- Pinch of cayenne pepper, optional
- Kosher salt and freshly ground pepper
- ¼ cup ice water to thin the tahini
- For the Haloumi
- 1 package of haloumi, sliced in ½-inch slabs
- 2 tbsp. olive oil
- ½ lemon
Instructions

Bring a pot of water to boil, place the lentils in the boiling water and cook for 15 minutes, drain and rinse with cold water, let cool. Place the lentils in a mixing bowl.

When the lentils are cool, mix with all the ingredients from the For the Lentil Salad list. Set aside. This step can be done hours (or day) in advance.

Make the Yellow Tahini: Whisk together tahini, lemon juice, olive oil, turmeric, cayenne, and ¼ cup water until smooth. Add salt and pepper to taste.

Cook the haloumi: Heat a large fry pan over medium-high heat and add olive oil. Add 6 slabs of haloumi at a time to the pan and sear on each side for 2 minutes. Remove from the pan, set aside.

Put it together: In a shallow serving bowl, or split between 4 individual bowls, place the lentils, top with haloumi, squeeze the lemon over the haloumi. Serve with Yellow Tahini on the side. Serves 2-4
