Zhoug is a bright green herbed condiment from Yemen that you will find at every restaurant or home in Israel. It is somewhat of a national chili paste. It is super spicy and fantastic added to any dip on the side. My favourite recipe is this one, from Ottolenghi. I love eating this alongside cooked tomatoes and tahini such as in the recipe Chicken Kebabs with Grated Tomato Harissa, Delicious Dish or with the Whole Roasted Cauliflower with Tahini and Pomegranate, Delicious Dish.

Ingredients

  • 35 grams cilantro leaves and stems,
  • coarsely chopped
  • 10 grams, parsley leaves and stems,
  • coarsely chopped
  • 2 hot green chilis, coarsely chopped
  • ½ tsp. ground cumin
  • ¼ tsp. cardamom
  • ¼ tsp. ground cloves
  • Pinch of sugar
  • ¼ tsp. sea salt
  • 1 clove garlic, smashed
  • 2 tbsp. olive oil
  • 2 tbsp. water

Instructions

    Place all ingredients in a food processor and pulse to chop, do not over process, there should be texture.

    Store for up to 3 weeks in the fridge. Makes about 1 cup.
