Goin’ Green Tahini Recipe

This ‘condiment’ is a staple in my fridge. Sesame seeds are so healthy, full of calcium and healthy fats. I use a few dribbles on almost anything. It’s even great a s a dip for raw veggies. Make a small jam jar of this and it will keep for 4-5 days in the fridge. The addition of flat leaf parsley adds a great flavour and of course adds fibre!
Ingredients
- ¼ cup tahini paste
- 1 clove garlic
- Juice of 1 lemon
- Enough water to thin the tahini to a
- heavy cream texture
- Big handful of fresh parsley leaves, small
- stems ok
- A few shakes of ground cumin
- A few shakes of cayenne, to taste,
- optional
Instructions

By Hand: in a medium size bowl, using a whisk, mix the tahini, lemon juice and a few Tbs. of water at a time. The mixture will become thick and dense before it thins. Add water a little at a time until a think cream consistency is achieved.

Mince garlic and add to tahini.

Add cumin and cayenne and salt.

Chop parsley finely, add to tahini.

Add water or more lemon juice to thin if necessary. Taste first, if it is sufficiently lemony, add water. If you prefer lemon’ier, add more lemon to think.

Store in jar in fridge.

In a High Speed Blender; mince garlic first in blender, add tahini paste, lemon and a little water, blend. Add more and more water to thin. Once the texture and lemon flavour is achieved, add cumin, cayenne and salt. Add parsley, blend so it chops. Serves 6
