Fire Roasted Salsa - condiments and dressings recipe by Carolyn Cohen

This is the easiest salsa to make and tastes exactly like your favourite restaurant salsa. The most important ingredient is the can of fire-roasted tomatoes, picture below.

Ingredients

  • 2 (14-ounce) cans fire-roasted tomatoes,
  • drained (pictured below)
  • 3 cloves garlic, peeled
  • 1 (4-ounce) can chopped green chiles
  • (pictured below)
  • 1 bunch (about 2 cups loosely-packed) fresh
  • cilantro leaves
  • 1 cup diced white or yellow onion
  • 1 jalapeno, stem removed (and seeded, if you
  • want less heat)
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon sugar (optional)
  • ¼ teaspoon black pepper

Instructions

  1. 1

Mince the garlic first in the food processor, add the onion, jalapeno, and cilantro, mince. Add the rest of the ingredient and mince until you have a uniform consistency.

  2. 2

Season with additional salt and pepper if needed.

  3. 3

Serve immediately, or refrigerate in a sealed container for up to 3 days. Serves 6

Tips & Storage

How to Store
Store in a glass jar or airtight container in the refrigerator. Most homemade condiments and dressings keep well for 1-2 weeks.
Serving Tip
Bring to room temperature before serving for the best flavor. Shake or stir well, as homemade dressings may separate.
Batch Cooking Tip
Make a double or triple batch — homemade condiments elevate any meal and are so much healthier than store-bought versions.
