These chow mein noodles are perfect for the weeknight. They come together super fast and everyone loves them. They’re simple in flavour, making them perfect to match with almost any main course!

Ingredients

  • 454 g/1 lb chow mein noodles*
  • 8 green onions, cut into 2-inch
  • pieces, white and light-green parts
  • separated from the dark green
  • parts
  • ½ of a cooking onion, sliced in ¼-
  • inch slices
  • About 4 cups bean sprouts
  • For the Sauce
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce (or replace
  • with light soy sauce)
  • 1 tbsp oyster sauce, vegetarian if
  • necessary
  • 1 tbsp sugar
  • 1 tbsp water
  • ¼ tsp white pepper
  • 4 tbsp neutral oil
  • Optional vegetables**
  • 1-2 cups julienned peppers
  • 1 package enoki mushrooms, ends
  • removed and mushrooms
  • separated
  • Handful of baby bok choy

Instructions

    Bring a large pot of water to boil. Have a colander and a wok or large fry pan handy.

    Prep all of your vegetables and have them ready on your work surface.

    Make the Sauce: Combine all sauce ingredients in a measuring cup, set aside near the stove.

    Boil the chow mien noodles in the prepared boiling water for 1 minute. Drain in the colander and then spread them on a kitchen towel so that the excess water can absorb and evaporate.

    Heat the wok over medium-high heat. Add 2 tablespoons of the neutral oil and sauté the whites and light green parts of the green onion and the sliced cooking onion for 1 minute.

    Add the noodles and, working quickly, toss, stir fry and separate the noodles while incorporating the onions into the noodles. Stop stir-frying. Add the remaining 2 tablespoons of oil to the perimeter of the pan. Let the noodles cook undisturbed for 1 minute, they will crisp up a bit. Then flip the noodles and repeat on the other side.

    Add the sauce, stir fry again. Cook for 2-3 minutes, allowing the sauce to absorb. Add the bean sprouts, sauté, tossing for another minute. Remove from the heat. Chop the dark green parts of the green onion, sprinkle on the noodles and serve hot. Serves

    *If you can find fresh chow mein noodles, they are the best. I buy them in the fresh section of my local Asian market. **If you want to add any of the optional vegetables: At the end of step 5, remove the onions, add a little more oil, and sauté the vegetables until they are soft and have browned a little. Then remove them from the pan and carry on with step 6 (without the veggies and onions in the pan). At the end of step 6, add the veggies and onions back to the pan with the noodles, toss, add the sauce and continue.
