Dukka Spice Blend Recipe

Dukka is an Egyptian spice blend consisting of a mixture of herbs, nuts, and spices. It is typically used as a dip with bread or fresh vegetables. You can buy it pre-made, but I prefer to make my own and store it in my freezer and use it when I need it. If you want to make it nut-free, replace the hazelnuts with pumpkin or sunflower seeds. I like to place it heap of it on a plate or bowl, pour oil over it and use it as a bread dip, people love it! Don’t skip out on toasting the nuts and spices, it makes all the difference.
Ingredients
- ½ cup hazelnuts, use sunflower seeds if nut
- allergic
- 3-4 Tbs. coriander seeds
- 3 Tbs. sesame seeds
- 2 Tbs. cumin seeds
- 1 Tbs. black peppercorns
- 1 tsp. fennel seeds
- 1 tsp. dried mint
- 1 heaping tsp. kosher salt
Instructions
- 1
Chop the hazelnuts, I place them in a large ziptop bag, close it and smash them with my rolling pin.
- 2
In a dry frypan over med heat, toast the hazelnuts until slightly colored, remove to a plate.
- 3
Repeat with the coriander seeds, sesame seeds, cumin seeds, peppercorns and fennel seeds, ALL SEPARATELY!! I know this takes a while, but its totally worth it and you will have a large batch for a long time use!

Let everything cool. Place the nuts and seeds and the mint and salt in a coffee grinder, spice grinder, heavy duty blender, processor or mortar & pestle and grind everything together, leaving a coarse consistency, do not make a paste!!
