Decadent Brie and Pear Farinata (Socca) Pizza Recipe

Ingredients
- 1 10-12 inch farinata (socca), cooked
- 2-3 tbsp caramelized onion*
- ½ pear, sliced thinly
- 2 oz or a few thin slices of brie cheese or ½ cup
- crumbled goat cheese
- 1 tbsp honey
- Freshly ground coarse pepper
- Sesame seeds
- 2-3 slices fresh Italian prosciutto, optional
- A few tbsp grated pecorino or Parmesan

Instructions

Once the farinata crust is cooked and comes out of the oven, loosen it from the pan using a flexible spatula or offset spatula. Leave it in the pan or transfer it to a parchment-lined cookie sheet (do this if you are making multiple pizzas).

Turn the oven to 425˚F.

Spread the caramelized onion over the farinata.

Top with pear slices and cheese. Drizzle with honey, then sprinkle with pepper and sesame seeds.

Cook for 8-12 minutes or until the cheese is bubbling.

Remove from the oven, top with prosciutto (if using) and grated pecorino or Parmesan cheese. Makes 4 small pizza slices. To make caramelized onion: Slice onion (any kind) in half and then slice each half into thin slices. Heat a large skillet over medium heat. Add 1 tbsp oil. Add onion slices and a pinch of sugar, toss with the oil. Turn the heat to medium low and cook the onions very slowly, stirring often for about 25 minutes or until they have significantly reduced and have caramelized.
