1-2-3 Chipotle Black Bean Dip Recipe

I make this as a dip for tortilla chips or as a spread on mini soft tacos and topped with avocado slices and pico de gallo.

Ingredients

  • 1 tsp. or so of Adobo sauce (it is the sauce
  • from the chipotle peppers in the can with
  • adobo) or ¼ tsp. chipotle chili powder
  • plus 1 tsp. tomato paste
  • 1 clove garlic
  • About ¼ cup cilantro leaves
  • ¼ of a small onion
  • Juice of one lime (about 3-4 Tbs.)
  • ¼ tsp. ground cumin
  • ¼ tsp. ground coriander
  • 1 can black beans, drained and rinsed.
  • 1 Tbs. olive oil
  • ¼-½ tsp. salt

Instructions

    In the bowl of a food processor (the mini is fine), mince the adobo sauce and garlic together, add the cilantro leaves, mince, add the onion, mince.

    Add everything else, mince to form a paste. Scraping the bowl a few times. Leave it as chunky or as smooth as you like. Makes 1½ cups
